Bake up a batch of these soft pumpkin cookies in just minutes, thanks to just two pantry ingredients. A box of spice cake mix and canned pumpkin is all you'll need. The cake mix cookies are good on their own, but our recipe testers preferred adding dark chocolate chunks and tart dried cherries. Here's how to make our two-ingredient pumpkin cookie recipe.

Tips for Making Pumpkin Cake Mix Cookies

Keep these helpful tips in mind when you're making homemade pumpkin cookies.

  • Choose your favorite flavor of cake mix. We loved the classic combination of pumpkin and spice cake, but it's also good with yellow, white, or chocolate cake mix.
  • Add mix-ins like dried fruit, chocolate, or nuts. If adding nuts, toast them first for the most flavor.
  • To help the cookies bake evenly, flat each mound of dough after you drop it onto the cookie sheet.
  • Cool the cookies completely before eating.

Ingredients

  • 1 (15.25-oz. package) spice cake mix

  • 1 (15-oz. can) pumpkin

  • 1 cup dried cherries, chopped, optional

  • 1 cup dark chocolate chunks, optional

  • Powdered sugar, optional

Directions

  1. Prepare Pan

    Preheat oven to 350°F. Line cookie sheets with parchment paper. 

  2. Mix Ingredients

    In a large bowl stir together cake mix, pumpkin, and cherries and chocolate chunks (if using). Drop dough by rounded tablespoons 2 inches apart onto prepared cookie sheets. Flatten slightly with damp hands.

  3. Bake and Cool

    Bake until cookies are set, 10 to 12 minutes. Cool on cookie sheets 2 minutes. Remove; cool on wire racks. If you like, sift powdered sugar over cookies
