  • Seasoning: We're flavoring the chicken soup with Italian seasoning, smoked paprika, salt, crushed red pepper flakes, and fresh basil.
  • Chicken: This recipe was made for rotisserie chicken. Shred it up and you're all set.
  • Cream Cheese: Add creaminess and body to the finished soup with half a block of cream cheese.

  • 1 cup chopped onion

  • 1 tablespoon minced garlic

  • 1 (32-ounce) carton reduced sodium chicken broth

  • 1 teaspoon italian seasoning

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon salt

  • 1/4 teaspoon crushed red pepper, plus more for garnish

  • 2 1/2 cups shredded chicken from a purchased roasted chicken

  • 4 ounces cream cheese, cubed, softened

  • 1/3 cup grated parmesan cheese, plus more for garnish

  • 3 cups chopped fresh spinach

  • 1/2 cup chopped fresh basil, plus more for garnish

  • 1 1/2 cups shell macaroni pasta, cooked according to package directions (about 4 ounces uncooked)

Directions

  1. In a 4- to 6-quart Dutch oven heat oil from dried tomatoes over medium heat. Add onion and cook until tender and starting to brown, about 8 minutes. Add garlic and dried tomato strips. Cook 3 minutes more.

  2. Add broth, Italian seasoning, smoked paprika, salt, and crushed red pepper. Bring to a boil over medium-high heat. Add chicken, cream cheese, Parmesan cheese, spinach, and basil. Reduce to medium heat and simmer, uncovered, until heated through, and cheeses melt. Add macaroni to each serving. Garnish servings with additional basil, Parmesan cheese, and crushed red pepper.
